I looked for cookie recipes that were gluten-free, wheat-free, dairy-free, preferably vegan, and could be made in under 30 minutes.

And, of course, consistently delicious.

You’ll find that the recipe is gluten-free, grain-free, wheat-free, and contains 1 cup of nut butter. The cookies are chewy, fudgy, moist, and travel easily.

FLOURLESS super chocolately gluten-free chocolate chip cookies made with coconut sugar, nut butter, and cocoa powder.
The BEST gluten free chocolate chip cookie recipe on Pinterest without flour is made with coconut sugar, nut butter, and cocoa powder.

You can make these vegan cookies from Alexa Peduzzi at fooduzzi with maple syrup, almond flour, and coconut flour. They don’t spread while they bake. You can roll each cookie into a flat circle. The recipe yielded seven cookies, but if you want to “dunk” them in a glass of milk, you can make twelve.

The chocolate chip cookies are gluten-free, vegan, wheat-free, and high in protein. They were delicious all week and I stored them in covered glass containers at room temperature.

Vegan Grain-Free Chocolate Chip Cookies

Sophia from Veggies Don’t Bite developed an amazing recipe for vegan gluten-free chocolate chip cookies. I noticed that some people were struggling with this recipe so I wanted to give it a try.

After implementing these tips, I continued to have success with this recipe.

You can try these tips for baking gluten-free chocolate chip cookies: 

 

  • Chill the dough in the refrigerator for ten minutes. The dough will be easier to scoop.
  • Allow the cookies to rest on the baking sheet for five minutes.
  • Transfer the cookies to a cooling rack and allow them to cool before attempting to eat or store the cookies.
  • Use parchment paper to separate the cookies in the storage container.
  • You need to use super fine almond flour.

I used Bob’s Red Mill Super Fine Natural Almond Flour. And, I used Enjoy Life Chocolate Chips.

I used aquafaba from a jar of chickpeas. I refrigerated the dough as recommended. The cookies will spread in the oven. You need to ensure that you roll and flatten small cookies. You should have 12-15 cookies.

These gluten-free chocolate chip cookies are chewy, moist, rich, vegan, dairy-free, wheat-free, and oil-free.

These cookies are aahhhhmazing! They were gone so quickly that I wasn’t able to snap a photo.

You can make these vegan gluten-free chocolate chip cookies in one bowl in under 30 minutes. They taste chewy and creamy.

I make 8 cookies and store them in covered containers at room temperature.

I used Bob’s Gluten Free 1:1 Baking Flour and Enjoy Life Chocolate Chips.

What are the standard kitchen tools, and where can you buy them?

I use a 1.5 pound William Sonoma Red Goldtouch Nonstick Loaf Pan.

But, you can use any flat non-ridge loaf pan.

Unless, the recipe calls for a specific type of loaf pan, such as a jubilee or round loaf pan.

Most recipes will ask you to line the pan with parchment paper or use a non-stick spray.

Regina from Leelalicious developed an amazing dairy free gluten free bread recipe.

You can use either coconut flour or almond flour. I tried her suggestion for substituting the baking powder with cream of tartar and baking soda. I included the honey as an optional ingredient and sesame seeds for the topping. And, I used avocado oil.

The BEST part is you can make the batter in a blender. You only need a blender and loaf pan to make this delicious gluten-free bread recipe.

Healthy Vegetarian Caesar Salad Recipe (GF, Vegan)

I’m addicted to the vegan caesar salad at my local Kreation in Marina Del Rey. I don’t even want to admit how many I’ve purchased in one single day.

But, they cost me at least $12 a pop. I wanted to make a large caesar salad recipe for dinner, and I wanted to make a large batch of dressing that I can use during the week.

I must of recipe tested and consumed dozens of vegetarian caesar salads in a short few weeks. And, they still didn’t compare to the caesar salad dressing from Kreation.

Finally, I tried a healthy vegetarian caesar salad dressing from Epicurious and I fell madly in love. I modified the recipe by omitting the garlic, salt, and curry powder. I knew that I was going to add spicy and salty chickpeas to the salad and I felt that the dressing would be too heavy with salt and curry powder. And, I wanted the final recipe to be as close to low-fodmap as possible.

Let’s get to it.

How to make a healthy vegetarian caesar salad

 

 

Combine the cashews, nutritional yeast, fresh lemon juice, extra-virgin olive oil, dijon mustard and black pepper in a food processor. While the motor is running, add 1/4 cup plus 2-3 tablespoons of warm water. You need to ensure the water is warm or it will be difficult to process the cashews. Process until the mixture is smooth, scrape down the sides of the bowl once or twice, about 3 minutes.

If you love the taste of garlic and you don’t need to worry about low-fodmap (lucky you) then you can add 1-2 cloves of garlic before you process the dressing.

If you are going to add regular dried chickpeas than you can consider adding salt and other dried seasonings such as curry powder to the dressing. But, I love spicy dried chickpeas from Saffron Road and incorporate at least 1/4 cup.

I toss the romaine with the vegetarian caesar salad dressing, then I add hemp seeds, nutritional yeast, spicy chickpeas, capers, and sliced avocado.

Ingredients

Vegan Caesar Salad Dressing Recipe

1/2 cup raw cashews

3 Tablespoons extra virgin olive oil

3 Tablespoons fresh lemon juice

3 Tablespoons nutritional yeast

1 Tablespoon dijon mustard

1/4 teaspoon black pepper

Optional Salad Dressing Ingredients

3/4 teaspoon salt

1/4 teaspoon curry powder

13 cloves garlic

Vegetarian Caesar Salad Recipe

8 cups bite-size pieces romaine lettuce

2 avocados, sliced

1/2 cup dried spicy chickpeas

1/2 cup hemp seeds

1/3 cup capers

1 Tablespoon nutritional yeast


Instructions

Caesar Salad Dressing Recipe

Combine the cashews, oil, lemon juice, yeast, mustard, and pepper in a food processor. While the motor is running, add 1/4 cup plus 3 tablespoons of warm water. Process until the mixture is very smooth, 2 to 3 minutes, scraping down the sides of the bowl as needed. Allow the dressing to come to room temperature before tossing with the salad.

Let’s Make The Salad

Toss the romaine with the dressing using your hands. Add hemp seeds and nutritional yeast and toss again using your hands. Add avocado slices, spicy chickpeas, and capers to the top of the salad. Divide the salad among four to eight plates. Serve immediately.

  • You can make the salad dressing and save half for the following day if you need a smaller portion.
  • I omit the salt, curry powder, and garlic because the spicy chickpeas are high in salt. However, if you omit the chickpeas or use another flavor, I recommend adding salt and another seasoning to the dressing prior to processing the dressing.

I searched best gluten-free apps, gluten-free recipes, gluten free scanner, an app to check for gluten and gluten-free near me in the App Store on my iPhone. I downloaded over 20 apps and used them for about a month. Some of them are helpful. Others, not as useful.

I look for apps that offer multiple useful features to avoid needing so many apps that relate to the same topic. During the last month, I found these four gluten-free apps to be the most useful, resourceful, and offer consistently delicious meals.

The Top Gluten Free Apps

 

Anytime a friend asks me about the best gluten-free apps; I always mention the Oh She Glows app and Deliciously Ella app. Combined, they offer the best gluten-free plant-based recipes.

Both of these recipe creators provide consistent, delicious recipes and their apps are user-friendly compared to other gluten-free apps that were tested.

  • I’m in love with Angela Liddon’s blog, Oh She Glows. While all the recipes are not gluten-free, most of them are gluten-free. You can filter the recipes by allergens, which include gluten, grains, raw, nuts, and oil.

 

  • This gluten-free app is primarily a recipe app and an introduction to her blog and books.

 

  • Some of my favorite gluten-free recipes on the app include cookie dough snacking squares and one bowl pumpkin chocolate muffins.

 

  • You will also find different recipes on the app compared to the blog. And, it’s updated regularly.

Essentially, an app to check for gluten offers the option to scan the bar code on a package to determine if it’s gluten-free.

Please continue to research ingredients to avoid unnecessary reactions. And, some packages such as my protein powder, won’t have a bar code that can be scanned.

Thankfully, I have found the scanner to be accurate across dozens of items. I intentionally scanned items that either had gluten or were gluten-free to ensure the apps are accurate and reliable.


Now Find ™ Gluten Free – An App To Check For Gluten

 

  • I love the now find gluten free app. Even though the name implies it’s a gluten-free app, it offers a dietary filter section for over 20 allergens or preferences. You can turn the filters on to remove products that contain those allergens. Some of the dietary filters include artificial color free, casein free, high fructose corn syrup free, peanut free, and tree nut free.

 

  • My second favorite feature is the brand’s section. It provides hundreds of brands that offer gluten-free products and gives you a product locator feature. You can stop worrying about where to find gluten-free or other allergen-free products. It has the standard scanner feature, category feature, shopping list section, and general search bar.

 

  • If you still need a list of naturally gluten-free products, the fresh goods feature provides dozens of product ideas.

 

  • The Now Find Gluten Free App also offers a coupon section that other gluten-free apps don’t offer which may save you hundreds of dollars. And it’s completely free.
An App To Check For Gluten allows you to scan a bar code to determine if the product is gluten-free.

  • The scan feature allows you to scan the bar code on specific items to determine if they are gluten-free.

 

  • I personally enjoy the search GF product section. You can either search for the name of a product. Or, you can choose a category such as bread and bakery and it provides a list of gluten-free breads and bakery items.

 

  • I find the search ingredients page helpful while I shop for groceries. You can type in an ingredient, and it will say either “this ingredient contains gluten” or “this ingredient is gluten-free”.

 

  • The history section saves the recent products that you scanned so you can review them at a later date.

 

  • If you travel, you’ll find the restaurant card and travel card helpful. The restaurant card provides a description of celiac disease, allergens, food items to avoid, and items that you can eat. You can present the card at a restaurant if you need to clarify your needs in writing. The travel card allows you to translate the information from English to over 20 common languages.
